Nilla Nut Muffins

As children, our Mom used to make this as a cake.  We would cut into slices and freeze it,  then grab it as a snack or quick breakfast.  When our family moved to England in the 70’s we could find any nilla wafers, so she used digestive biscuits(cookies). Less sweet but the did they trick.  Fast forward to 2000’s, we opened the Looking Glass Bakery, and start to sell these as a muffin.  Everyone wanted the recipe but we would share.  Now we can, enjoy.

Ingredients

  • 2 sticks Butter or Margine
  • 2 cups Sugar
  • 6 Eggs
  • 1 cup Milk
  • 1 box Nilla Wafer (11 oz)
  • 7 oz Flaked Coconut
  • 1/2 cup Crushed Pecans

Instructions

  • Preheat oven to 325 degrees
  • Cream butter and sugar
  • Add eggs, one at a time; beat after each addition
  • Crush nilla wafers to a fine flour consistency
  • Slowly add some wafers to blender, then milk and mix, reapeat until done
  • Add coconut and pecan
  • Butter cupcake then cook for 40 minutes

Notes

This was originally made as a cake. For a cake, butter and flour a tube cake pan and cook at 325 degrees for1 hour 30 minutes.
